Rainbow Salad
Servings: 4-6
Products Used: Tanimura & Antle Artisan Lettuce
Ingredients
- 2 Heads Tanimura & Antle Artisan® Lettuce, chopped
- ½ cup Tanimura & Antle Artisan® Sweet Italian Red Onion, diced
- ½ cup red cherry tomatoes, sliced in half
- 1 carrot, thinly sliced
- ½ cup yellow cherry tomatoes, sliced in half
- 1 avocado, chopped
- 1 cup cucumber, thinly sliced
- 1 cup purple cabbage, shredded
- ¼ Slivered almonds
- Handful of fresh cilantro, chopped
For the Dressing
- Zest of 1 lemon
- 3 tbsp. lemon juice
- 1 1⁄2 tsp. Dijon mustard
- 1 1/2 tsp. honey
- Kosher salt and freshly ground black pepper, to taste
- 3 tbsp. olive oil
Directions
- Add chopped Artisan Lettuce to large salad bowl
- Add all other salad ingredients on top of the Artisan Lettuce
- To prepare the dressing, whisk lemon zest and juice, mustard, honey, salt, and pepper in a mixing bowl or mason jar until combined
- While whisking, slowly drizzle in olive oil until vinaigrette is emulsified
- Toss dressing into salad to taste, serve & enjoy!
