Ingredients
- 1 Clamshell Tanimura & Antle Artisan® Lettuce
- 1 Red bell pepper, cut into thin strips
- ½ cup Carrot matchsticks
- 2 Tbsp. Cilantro, chopped
- 2 Green onions, chopped
- ¼ cup Shelled edamame
- 12 oz. Cooked shelled deveined medium shrimp (about 20)
- ¼ cup Chopped peanuts
- Fried wonton strips, to taste
For the Dressing:
- 3 Tbsp. Fresh lime juice
- 2 Tbsp. Thai sweet chili sauce
- 2 Tbsp. Olive oil
- 1-1/4 tsp. Soy sauce
- 1 tsp. Rice wine vinegar
- 1/4 tsp. Sugar
Directions
- Chop Tanimura & Antle Artisan® Lettuce, rinse and place in the refrigerator to crisp for 45 minutes.
- While waiting for Artisan Lettuce to crisp, combine all dressing ingredients in small bowl.
- Combine salad ingredients in salad bowl and mix to combine.
- Add dressing and toss to coat.
- Serve & Enjoy!
