Artisan Romaine, Strawberry & Feta Salad

Products Used: Tanimura & Antle Artisan Romaine
Ingredients
  • 2-3 Heads Tanimura & Antle Artisan® Romaine, cored, torn or cut into 1 ½” pieces
  • ½ Cup Sliced almonds, toasted
  • 1 pint Strawberries, cored, cut in quarters
  • ½- ¾ Cup Feta cheese, crumbled
  • 2 Tbsp. Raspberry vinegar
  • 1 Tbsp. Balsamic vinegar
  • 1 Tbsp. Honey
  • 1 tsp. Minced garlic
  • ½ tsp. Dijon mustard
  • 1 Cup Olive oil
  • Salt and pepper
Directions
  1. In a mixing bowl, combine vinegars, honey, garlic and mustard.

  2. Whisk in oil and season with salt and pepper, to taste.

  3. In a large bowl toss Artisan Romaine with almonds, strawberries and feta, and then add dressing, a little at a time, reserving any extra in the refrigerator for up to one week. 

  4. Serve immediately.
