Artisan Sweet Gem Salad with Bacon, Cherry Tomatoes & Herbed Croutons

Products Used: Tanimura & Antle Artisan Sweet Gem
Ingredients
  • 4 Heads Tanimura & Antle Artisan® Sweet Gem Lettuce, cored and cut crosswise into 1″ strips
  • 2 Tbsp. Unsalted butter, melted
  • 1 tsp. Dried oregano
  • 1 tsp. Dried thyme
  • 4 Slices country white bread, cut into 12” cubes
  • 1 Clove garlic, finely chopped
  • 12 Thick-sliced bacon, cut into 12” cubes
  • 1 Cup Grated parmesan cheese
  • 1 Cup Mixed red and yellow grape tomatoes, halved
  • 12 Cup Torn basil leaves
  • 3 Tbsp. Fresh oregano leaves
  • 5 Scallions, chopped
 
For the Dressing: 
  • ¾ Cup Mayonnaise
  • 14 Cup Fresh lemon juice
  • 14 Cup Extra-virgin olive oil
  • Salt & Pepper, to taste
Directions
  1. In a small bowl, whisk together the mayonnaise, fresh lemon juice, and extra-virgin olive oil until smooth.
  2. Preheat your oven to 350°F (175°C). In a large bowl, combine the melted butter, dried oregano, dried thyme, and chopped garlic. Toss the cubed country white bread in the butter mixture until evenly coated. Spread the bread cubes on a baking sheet in a single layer and bake for 8-10 minutes, or until golden brown and crisp. Stir halfway through to ensure even cooking. Remove from the oven and allow to cool.
  3. In a pan over medium heat, cook the bacon cubes until crispy and browned, about 6-8 minutes. Transfer the cooked bacon to a plate lined with paper towels to drain any excess grease.
  4. In a large serving bowl, add the chopped Artisan Sweet Gem lettuce. Top with the halved tomatoes, chopped scallions, basil, and fresh oregano leaves. Add the crispy bacon, herbed croutons, and grated parmesan cheese to the salad.

  5. Drizzle the dressing over the salad just before serving, and toss the salad before serving!
