Sweet Gem Green Goddess Wedge

Products Used: Tanimura & Antle Artisan Sweet Gem
Ingredients
  • 1 bag Tanimura & Antle Artisan Sweet Gem 
  • 1 watermelon radish, thinly sliced
  • 4 oz feta, crumbled
  • 1/4 cup toasted and salted pepitas
  • Dill for garnish

Dressing

  • 1 cup packed dill, mint and parsley
  • 1/4 cup chives
  • 1/2 cup greek yogurt
  • 1/2 cup mayonnaise
  • Zest and juice of 1 lemon
  • 1 small clove garlic
  • 1/2 tsp. kosher salt
  • Freshly ground black pepper to taste
Directions
  1. Prep the Artisan Sweet Gem by cutting each head in half.
  2. Measure dressing ingredients into a a food processor or blender and blend until smooth.
  3. Spread a spoonful of dressing onto each plate and place the sweet gem halves on top. Drizzle
    each wedge with more dressing and top with radish, feta, pepitas and dill.
  4. Serve & Enjoy!
