Ingredients
- 1 bag Tanimura & Antle Artisan Sweet Gem
- 1 watermelon radish, thinly sliced
- 4 oz feta, crumbled
- 1/4 cup toasted and salted pepitas
- Dill for garnish
Dressing
- 1 cup packed dill, mint and parsley
- 1/4 cup chives
- 1/2 cup greek yogurt
- 1/2 cup mayonnaise
- Zest and juice of 1 lemon
- 1 small clove garlic
- 1/2 tsp. kosher salt
- Freshly ground black pepper to taste
Directions
- Prep the Artisan Sweet Gem by cutting each head in half.
- Measure dressing ingredients into a a food processor or blender and blend until smooth.
- Spread a spoonful of dressing onto each plate and place the sweet gem halves on top. Drizzle
each wedge with more dressing and top with radish, feta, pepitas and dill. - Serve & Enjoy!
