Ingredients
1 Large Head Tanimura & Antle Iceberg lettuce, cored, large outer leaves removed (8-10 lettuce “cups” at least), center portion sliced very thinly into strips
2 Carrots, peeled, shredded
6 Green onions, chopped
3 Cups Roasted chicken, shredded
1/3 Cup Cilantro, chopped
¼ Cup Roasted peanuts
- For the Dressing:
¼ Cup Lime juice
¼ Cup Sesame oil
1 Red jalapeno, seeded, chopped
2 Tbsp. Soy sauce
2 tsp. Honey
1 tsp. Fish sauce
1 tsp. Grated ginger
Salt & Pepper
Directions
- Whisk dressing ingredients in a mixing bowl and set aside.
- In a large bowl, combine thinly sliced iceberg, carrots, green onion, chicken and cilantro.
- Toss with dressing and mix well.
- Portion into reserved iceberg lettuce cups and garnish with peanuts.
- Dip the iceberg wraps in the remaining dressing and enjoy!
