Mediterranean Red Onion & Tomato Salad

Products Used: Tanimura & Antle Artisan® Red Onions

Ingredients

·        5 cups quartered tomatoes, about 4 large tomatoes

·         ¼ cup Italian parsley, chopped

·         ¼ cup Fresh dill, chopped

·         1 cup Sliced Tanimura & Antle Artisan® Red Onion

·         ¼ cup Capers, drained

·         2 Garlic cloves, minced

·         Feta cheese, optional

For the Dressing: 

  • ¼ Cup Olive Oil
  • 2 Tbsp. Fresh lemon juice
  • 1 Tbsp. Red wine vinegar
  • 1 tsp. Dijon mustard
  • Salt & Pepper, to taste
Directions
  1. Chop all salad ingredients and toss in a large bowl, reserving the feta cheese for the end. 
  2. Combine all dressing ingredients in a small bowl then add the the large salad bowl. 
  3. Toss the ingredients with the dressing to coat. Top with the feta cheese (optional). 
  4. Serve & Enjoy!
