Ingredients
- 1 Bag Tanimura & Antle Artisan® Sweet Gem
- 2 Cups cooked rotisserie chicken, shredded
- 1 Red bell pepper, thinly sliced
- 1 English cucumber, thinly sliced
- 1 Cup purple cabbage, shredded
- Optional Toppings: Sliced green onion, chopped peanuts, sesame seeds
For the Sauce:
- 1/2 Cup smooth peanut butter
- 2 Tbsp. soy sauce
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. rice vinegar
- 3 Tbsp. honey
- 1 Tbsp. water
- 1-Inch wide piece of ginger, grated
- 1 Small clove of garlic, grated
Directions
- Prep the Artisan Sweet Gem. Cut the root stem off and separate the leaves. Rinse with warm water and pat dry.
- Measure sauce ingredients into a bowl and whisk until smooth.
- Toss shredded chicken with 1/2 cup of the peanut sauce until thoroughly coated. Save extra sauce for drizzling or dipping.
- Assemble the lettuce cups. Divide the peanut chicken between the lettuce leaves along with the bell pepper, cucumber and cabbage. Top with green onion, peanuts and sesame seeds as desired.
